MDM is the abbreviation for Mechanically Deboned Mear, which means the meat resulting from the screening of the chicken under high pressure by the mechanical boning device. In this procedure, the chicken bones are separated from the meat tissues. This method is used to obtain the rest of the chicken carcass after removing the primary chicken cuts. MDM can also be called MSM, which stands for Mechanically Separated Meat. Chicken processed with MDM gives the meat a pasty consistency and the procedure can be done for species including pork, turkey, ground meat, chicken and lamb.
The paste that is extracted from MDM is used to make processed meat. The process of obtaining chicken MDM involves grinding or crushing the remaining chicken carcass after manual removal of the chicken meat.
